Lent “Potaje” (Potaje de Cuaresma)

- 2 glasses chickpeas
- 2 eggs
- 2 slices bread
- 1 big leek or 2 small
- 1 onion
- 3 garlic clove
- 300 gr cleaned spinach
- 4 ripe tomatoes
- 1 tablespoon sweet paprika
- Extra virgin olive oil
- Salt
Leave the chickpeas to soak overnight
Drain the checkpeas
Take the cooking pot, or a pressure cooker
Boil the 2 eggs, then remove the eggs’ shell and separate the egg’s yolks from the egg white. Take the yolks and beat them in the food processor.
Pour off extra virgin olive oil in a pan and fry the bread
Place the fried bread in the mortar and mash it all
Chop the onion, the leek and the garlics, then place all in the pan where the bread has been fried, add salt and finally cook it on low heat
Add the spinach and fry it
Take the grated tomatoes and fry them for a few minutes
Finally add the sweet paprika, the chickpeas to cook in the pot, add the fried vegetables and the mashed ingridients that we had in the food processor.
Cook all together for twelve or fifteen minutes and you have it ready to serve and enjoy our “carmelitan potaje”.
