Baked pumpkin in san anton (calabaza de san antón)

  • 1 pumpkin
  • A glass aniseed or cognac

The pumpkins my father grows have always been roasted at home, and we’re lucky they’re so sweet they don’t need sugar. Although I do like to open the lid and pour a glass of anise or cognac. You cover it again and in the oven!

It doesn’t need anything else for me. I can easily eat a pumpkin by myself. There’s always an excuse to go to the kitchen!

In fact, if the pumpkin is big, I always think of taking advantage of half to make something sweet… but since it’s very sweet, I feel sorry for it…!
